Our menu this week is already funkyfied. I realized today that I have a groupon to use at a local restaurant that will expire tomorrow. Perfect. I will stop by and pick up something simple for dinner tonight. I pulled into the parking lot to find that the restaurant is closed on Mondays. Who is closed on Monday’s? Apparently they are. Since, it was going to be past 7pm until I got home, I had to spontaneously pick up food.
I would like to tell Subway that their commercial works. As I scrambled in my brain for what may be somewhat inexpensive, the “February $5 footlong” jingle began to play. As annoying as it is, it is quite effective.
My kids ate at Grandma’s tonight, so it was only a $10 unplanned food expense. I took a deep breath and rolled with the punches.
Here is what the rest of our week looks like:
- Chicken Enchiladas, rice and beans , salad
- Broccoli & cheese soup, or potato and cheese soup, salad
- Sausage, potatoes and veggie roast
- Honey baked chicken, black bean & corn salad, cooked carrots
- Cream cheese chicken in slow cooker, broccoli
- Baked maple salmon, homemade mac and cheese , lima beans
- Hotwing chicken, homemade fries, celery
I am going to be honest. Every time chicken enchiladas appear on the menu, I substitute something spontaneously. I have never made them that we all say “yippy skippy!”. If you have an authentic kick butt (yet easy) enchilada recipe, I encourage you to share it.

DeleteChicken Enchiladas - a favorite, yet you are right they are work...here is my recipe - though do not know how authentic it is :)
ReplyDeleteDip Tortilla, both sides in enchilada sauce (yes, the canned version)...inside I place shredded chicken (can do some beans too), a spoonful of sour cream, a sprinkle of monterey jack and cheddar cheese, a sprinkle of chopped scallions. Roll up...continue process til all made. Cover with remaining enchilada sauce (I use 2 cans total), sprinkle with left-over cheese (who knows how much, gobs I am sure), sprinkle left over scallions and a covering of chopped black olives. Bake 375 ish for 20-30 min. If the chicken is already shredded, the process is so much easier. Allison

DeleteYou may not need to try this one, because Allison's looks awesome! And mine probably aren't enchiladas, but Brett gets VERY happy whenever we have them. A co-worker gave me the recipe this year. You can mess with the amounts, it's kind of a "wing it" thing. But SO EASY and yummy.
ReplyDeleteChichen (grill or bake it, then pull apart)
Cream Cheese (1 or 2 8oz packages)
Hot Salsa (a whole jar, or enough to make the mixture very pink)
Shredded Cheddar
Flour Tortillas
Black Beans (optional)
Jalapenos (optional, hot salsa will do the trick)
Chicken, cream cheese and some salsa in skillet and melt.
Put salsa in bottom of baking dish
Put mixture in tortilla shell, sprinkle cheese on it and roll it, place in dish.
Pour more salsa on top
Bake at 250 for 25 minutes.
Sprinkle more cheese on top, then bake maybe 10-15 minutes more.
