Menu plan for week of January 2nd

I can't promise that I will share my menu with you every week, but I promise to try to share it often.  This week, I decided to plan a lot of my menu off of what I already had on hand. 

My meals are not always frugal.  For instance, I will serve meat as the maindish (which is a frugal "no no").  However, I try to obtain my meat at really low prices.  Plus, my side dishes are usually very simple or inexpensive.  I also have many kid favorites in my menu throughout the month.

So here is what my Flamingo flock will be eating this week.

Sunday (today): barbeque chicken/ hotwing chicken sandwiches (leftover from New Year's), scalloped potatoes (leftovers from late last week), baked sweet potatoes

Monday: Meatballs with peppers and pineapple  and broccoli (this is a pioneer woman recipe that I've never made before.  I assure you it won't be as tasty as hers). 

Tuesday: Tomato, pasta and bean soup and homemade rolls  (I never made this before either.  I am making it up which is never a good sign.  Regardless, I will post the recipe if it is edible).

Wednesday: Tacos 

Thursday: Baked barbeque bone in chicken, mashed cauliflower, rice & beans (another frugal experiment this week)

Friday: homemade Pizza

Saturday: baked potatoes, salad , marinated steak on the grill (for hubby and I), chicken nuggets for kids

Sunday lunch: hamburger barbeque in slowcooker, applesauce, chips

Sunday dinner: chicken drumsticks, homemade fries, salad

I hope to share some of my recipes with you as time goes along.  However, if there is something you see that really intrigues you, give a shout and I will try to share it sooner.

For your soup- (I make similar) I use 1 vegan bouillion (you could use whichever) 1 can of diced tomatoes, 1 can of kidney and 1 can of cannelini beans, 1 cup of spinach, 1 zucchini, 2 grated carrots, 1 diced onion, 2 stalks of celery, 2 garlic cloves, and 4 cups of water + a splash of fresh lemon juice and basil sprigs... mmmm.... basically- minestrone. :)
