A Hearty, Healthy, Frugal Soup: Beef Vegetable Soup

I previously confessed my infatuation with soup.  Especially on a cold and dreary day, what is better than a hearty bowl of soup?

One of our family favorites is this vegetable soup.  I have fed a crowd on last minute notice with this soup.  It is so easy.  It can also be very hearty so no should walk away hungry.

Haven’t thought of dinner yet?  You can have this on the table in 30 minutes! You just might have all the ingredients on hand.100_3390

Beef Vegetable Soup

  • 60 oz beef broth (equal to 4 cans or 2 large containers)
  • 1 can diced tomatoes with juice(15 1/2 oz)
  • 1 –1 1/2 lb ground beef (although you could substitute with ground turkey or eliminate meat altogether)
  • 1 tsp oregano or italian seasoning
  • 1 tsp minced garlic
  • 1/2 tsp thyme
  • 2-3 potatoes chunked
  • onion, celery, carrots, broccoli, corn, the veggie options are endless  (I like to cut my veggies in large chunks to make the soup a bit more hearty)
  • other options: cooked rice or cooked pasta (a great way to use up those leftovers)

Directions: Brown meat and drain.  Add all other ingredients and simmer for 20 minutes (or until potatoes and veggies are tender).  Add meat and simmer for another 5 to 10 minutes.  If adding cooked pasta or rice, add the last 5 minutes.

Serve this soup with home made rolls or bread  and you are good to go.
