Menu Planning Freezer Style

sxc.hu photo
Even though I know why I should menu plan, I do not like doing it anymore than the next guy.  This week was especially tough.  Only because I knew I had to conquer my freezer before planning.
If you follow me on Facebook, you know that I was wrestling with starting the whole ordeal.  I finally broke down yesterday and inventoried everything in my kitchen freezer.  I've yet to do the deep freezer.  I'm not that ambitious.

Once I got started, it was quite exciting.  I found all kinds of goodies in there.  I would tell you what I found, but it's almost embarrasing how much food I accumulated.  So, we are going to eat out of the freezer for at least the next 2 weeks.

Here's what we are planning to eat this week:

Monday: shrimp salad and homemade bread ( I found shrimp in the freezer and the kids had left over chicken drumsticks with their salads)

Tuesday lunch: homemade vegetable soup (I found half a batch in the freezer)
Tuesday dinner: spaghetti with ground italian sausage and french bread and salad (bread, noodles, sausage and sauce all from the freezer)

Wednesday: Creamy chicken and rice soup  and salad (I make something similar to this.  From my freezer, I will use frozen chicken stock, frozen cooked rice (brown and long grain) and shredded turkey/chicken)

Thursday:  Baked sourcream chicken (with sourcream mixture I found in the freezer), cooked carrots, mashed potatoes (or potato of some sort)

Friday:  Lunch: may "splurge" on lunchmeat from market
Dinner: eat out (we are doing a family day)

Saturday Lunch: hamburgers, homemade rolls,  fries (guess where I found the fries and hamburg), and fruit
Saturday Dinner: it's just the kids and I eating so we will do something fun like breadsticks (found breadstick dough and sauce in there too) and carrots and dip

Sunday lunch: Sausage sandwiches in the slowcooker, chips, fruit, carrots and dip (again, the freezer.)
Sunday dinner: Chicken nachos (chicken, diced tomatoes, and black beans from you know where)

For breakfasts we will have oatmeal, smoothies, cold cereal, granola, bread machine whole wheat toast

For lunches we typically have leftovers or sandwiches (unless something is planned)

Did you plan for this week yet?

  2. lol Emily. officially 3. Obviously, we have the kitchen freezer. We also have a deep freezer. The 3rd freezer I don't really need. It's above the extra fridge we have in the garage. The only reason I put stuff in it is because it runs more efficently that way. I like to store my flour and breads in that one.

I freeze ALOT of stuff. Alot. We also have our own beef/meat which takes up a chunk of the deep freezer.

I don't recommend 3, but I would have no idea how to exist without 1 extra freezer! when i buy chicken in bulk...it might be 25-50 lbs worth!

  3. We totally need a 2nd freezer! We are hoping to move into a bigger house with a year or two. We currently don't have a garage, but that will be a requirement for us and THEN I will get a deep freezer!
